Banana Bread is a keeper!
Because it is one of those foods that should be a staple in everyone’s baked goods recipes. Let me tell you why:
Our banana bread is great for breakfast. Also, it’s great for a snack. And it fills in for dessert while it also goes with lunch. Additionally, it’s seasonless and seasonal. Whether you have it in the heat of summer or with your holiday meal. It’s appropriate on the Christmas cookie plate, too. And it freezes easily and comes together easily. While it compliments a cup of coffee or tea as well. So, it’s a practically perfect food and we’ve got the brilliant recipe right here for you.
How do you like to eat yours?
So this banana bread is a winner all by itself. But, of course, it never hurts to step it up a notch, now and then, right? So if you want to add something, you could start by buttering your bread. It’s dreamy with a coating of vegan butter on top. Or a schmear of vegan cream cheese is excellent, as well! Another option is jelly, jam, or apple butter. And how about a little peanut or almond butter? So many choices to choose from!
Topping it off.
I’m also going to share with you another way we like to take it over the top. Streusel. Because on occasion, we like to get a little fancy by adding a streusel topping to our brilliant banana bread. And if you’d like to try that, follow the notes at the end of the recipe. It’s a taste explosion of spices, nuts, brown sugar, and butter. It’s a fancy hat on top of your brilliant banana bread. Brilliant Banana Bread
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/3 cup vegan butter or vegan shortening
- 3/4 cup packed brown sugar
- 2 tablespoons ground flaxseed mix with 6 tablespooons water and let gel for 5 minutes
- 1 cup mashed bananas about 2 – 3
- 1/2 cup soymilk
- 1/2 cup chopped walnuts
Instructions

- Preheat oven to 350 degrees F.Grease and flour a 9 x 5-inch loaf pan. Sift flour, soda, and salt together. In a large bowl, cream butter and sugar thoroughly. Add flax seed mixture and bananas and beat well. Next, alternately add 1/3 of the flour mixture and then 1/2 of the milk mixture, then continue adding this way until all flour and milk are incorporated, beating after each addition. Fold in nuts. Pour into loaf pan. Bake for 1 hour and 5 minutes or until a knife comes out clean. Cool on a wire rack.
optional Streusel Topping
- 1/2 cup flour, 1/2 cup brown sugar, 1/2 cup finely chopped walnuts or pecans (optional). 1/4 cup vegan butter, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg. Mix all ingredients together, blending with a fork, and top banana bread with streusel before baking.
