Why do you need a snack cake?
Okay, so you’re finished with dinner and you sit down in front of the TV to watch your favorite show. You’re in your comfy clothes and you’re cuddled up in your comfy chair. But you just need a little somethin’ somethin’ for the perfect comfy, cozy finish to your day. And, you want somethin’ chocolate.
So here you go!
This Snack Cake Goes Way Back
This cake has made the rounds at our house for years and years. It came from a Hershey’s recipe and it was vegan before vegan was cool. But I never realized it was dairy free when I was vegetarian. I just knew it was a great recipe for times when I didn’t have any eggs in the house. Now I’m thrilled that one of our favorite treats, from way back then, was vegan all along.
And it’s such an easy, throw-together cake that doesn’t need frosting! It became my go-to dessert of choice when the kids were little and I just wanted something yesterday, you know what I mean? It’s unfussy! Yet it’s the delicious solution to your quest for a sweet and easy ending to your day.
The kids can make it!
Come on, get the kids involved in the baking process, as well! It just takes one bowl, some common pantry staples, and a sprinkling of chocolate chips on top. Next, pop it into the oven for 40 minutes. It couldn’t be simpler.
So don’t schlep out to the store for some over-processed, preservative-heavy treat. Stay home and whip this up in a New York minute!

Somethin’ Somethin’ Snackin Cake
Ingredients
- 1 2/3 cup all-purpose flour
- 1 cup packed brown sugar
- 1/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup water
- 1/3 cup vegetable oil
- 1 teaspoon vanilla
- 1 teaspoon vinegar white or apple cider
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degrees F.Grease and flour a square baking pan. (8x8x2 inches.)In a mixing bowl, combine flour, brown sugar, cocoa, baking soda, and salt. Add water, oil, vanilla, and vinegar.Mix until smooth and pour into prepared pan.Sprinkle the top of the cake evenly with chocolate chips.Bake for 35 – 40 minutes or until a toothpick comes out clean. Cool on a wire rack.
