Preheat oven to 350 degrees F.Grease and flour a 9 x 5-inch loaf pan. Sift flour, soda, and salt together. In a large bowl, cream butter and sugar thoroughly. Add flax seed mixture and bananas and beat well. Next, alternately add 1/3 of the flour mixture and then 1/2 of the milk mixture, then continue adding this way until all flour and milk are incorporated, beating after each addition. Fold in nuts. Pour into loaf pan. Bake for 1 hour and 5 minutes or until a knife comes out clean. Cool on a wire rack.
optional Streusel Topping
1/2 cup flour, 1/2 cup brown sugar, 1/2 cup finely chopped walnuts or pecans (optional). 1/4 cup vegan butter, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg. Mix all ingredients together, blending with a fork, and top banana bread with streusel before baking.
