115 ounce can or boxchickpeas (aka garbanzo beans)
1/4cupvegan mayo
2-3tablespoonsonion mincedI prefer red
1/4teaspoonOld Bay seasoningoptonal
1/2stalkcelery, finely chopped
2tablespoonstoasted sunflower or pumpkin seeds,salted
1tablespoonfinely chopped pickle or pickle relishoptional
1teaspoonmaple syrup
salt and pepperto your liking
Instructions
Drain chickpeas and pour them into a bowl or pie plate wide enough to mash.
Mash up chickpeas with fork or potato masher leaving some whole.
Add in rest of ingredients.
Use for sandwich filling, dip for crackers or wrapped in a lettuce leaf.
Notes
My favorite way to enjoy this sandwich is on lightly toasted ciabatta bread or roll with romaine lettuce and a thick slice of tomato. Love it!
