Righteous Red Rice Revolution!

A righteous red rice recipe that's revolutionary for all your side dishes... and then some!

Ingredients
  

  • 1 cup long grain white rice
  • 2 plum tomatoes diced
  • 1 cup onions diced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 3/4 cup vegetable broth
  • 1/4 cup tomato sauce
  • 1/4 cup fresh cilantro or 1 tablespoon dried
  • 1 teaspoon dried oregano
  • salt and pepper to taste

Instructions
 

  • 1.) Heat oil in a pan over medium heat then add onions and saute until soft and translucent. 2.) Add garlic and cook briefly then add rice and cook about 3 minutes until starting to tan. 3.) Add tomatoes, tomato sauce, and broth, and bring just to a boil. 4.) Add cilantro, oregano, salt, and pepper and reduce heat to simmer. 5.) Cover and cook for 15 minutes on low. Fluff with a fork and serve.

Notes

For a quick fix if you're out of fresh tomatoes:
Omit plum tomatoes and tomato sauce from the recipe and instead use 1 14.5-ounce can of diced tomatoes plus its juice.
